I have been obsessed with Nigella Lawson for some time now.  In my mind’s eye we are kindred spirits, sisters, BFFs.  Despite her recent personal problems, this domestic goddess deserves respect and admiration for all she has accomplished.  Her recent book Nigellissima ($23-$35 US), is an homage to my culture and heritage.  I simply love the book and her easy to make Italian inspired recipes.  Her recipe for Meringue Gelato Cake, caught my eye.  I was instantly transported to a small Cafe in Rome where my husband and I had our first taste of authentic Italian Gelato.  This “cake” is so simple to assemble, you can whip it up in the morning before breakfast and serve it proudly in the evening after dinner.

First order of business, heat of any kind is not needed for this “cake”.  All that is required is a free space in your freezer.

Nigella Lawson Meringue Gelato Cake Recipe:

  • 1¼ cups of whipping cream.
  • 1 ounce of cold dark chocolate (cut into pieces with a knife).
  • 1 tablespoon of Liquor of your choice (Rum is Nigella’s choice) I see Amaretto as a comparable substitute.
  • 4 oz. prepared Meringues crushed roughly in the batter.
  • A loaf pan lined with cling wrap for easy removal.

Whip the cream to stiff peaks, fold in the chocolate pieces, rum and crushed meringues.  Freeze for 8 hours or overnight.  Hai finito (you are done).

Nigella provides exact measurements for this dessert, but I find it unnecessary being that this “cake” really does not require any baking.  Add more (I often do) or less depending on the recipient crowd you will serve.  My eldest son could eat this enter batch in two days time and not gain a single pound, fortunato (lucky…yes I speak Italian).

Nigella serves this with raspberries and freshly made chocolate sauce, but I cannot burden myself with making everything from scratch.  Trader Joe’s offers a lovely organic chocolate flavored syrup for my drizzling convenience.  For a little American Fourth of July flare, try adding blueberries along with the raspberries.  Clever?  I thought so.

THE VERDICT:  If makeup could talk what would it say?

Makeup would tell you if you crave fast and delicious Italian food, Nigellissima is your answer.  This “cake” is one of the most made desserts in my house.  Of course you can tweak it anyway you wish, just as long as you enjoy the end results as passionately as any self-respecting Italian would.  Lipstick is not required, as it will only be removed or eaten.  So loosen up the belt buckle, you are in for a delectable ride.  Happy Fourth of July to all!!!
